Mindy Casserole

6 breasts of chicken
(boil and chop)

12 oz sour cream
1 can cream of chicken soup
(mix and pour over chicken)

2 tubes of ritz crackers, crushed
1 T poppyseeds
1/2 C butter, melted
(mix and sprinkle on top)

Bake at 350 for 30 to 40 min. Serve over cooked rice

Kelly suggestion--bake with cooked rice under chicken

  1. I made this casserole last week but I put a layer of chicken, asparagus, sauce, and then crackers. It was good, but leftover asparagus isn't my favorite.

  2. Mmm. I bet the vegetables added a lot more flavor.

    Healthy substitution: Flax seeds instead of poppy seeds and ground toasted almonds instead of crackers. Maybe don't add until afterward?
