3 Eggs
1 C oil
2 C sugar
2 C grated, peeled zucchini
1 t vanilla
3 C flour
1 t salt
1 t soda
2 t cinnamon
1/4 t baking powder
3/4 C chopped nuts (optional)
- Beat eggs until foamy.
- Add oil, sugar, zucchini and vanilla. Mix well but lightly.
- Add dry ingredients, mostly mixed together. Mix well blended.
- Stir in nuts.
- Pour into two greased loaf pans.
- 325 for one hour or until done. Just barely pulls away from the edges like a cake does.
