Whole Wheat Bread

6 c. whole-wheat flour
2 T. instant yeast
4 c. hot water
2 T. lemon juice

Combine and let stand for 10 minutes. Then add:

3/4 c. sugar or honey
1/3 c. oil
1 T. salt
1 c. white flour
3 c. whole wheat flour

Knead 10 minutes, then put in 4 greased loaf pans. Let rise 1/2 hour. Bake at 350 degrees for 30 minutes.

    I typically let it rise 45 minutes, rather than 30, but if you are in a time crunch, 30 works just great. Also, the last time I made it, I mistakenly put the sugar in at the beginning, and it actually rose much nicer than usual, so I'm going to do that from now on. You can really use just about any combination of wheat and white flour.
